Ingredients

The Dip
Cream cheese, softened8 oz
Sour cream½ cup
Mayo¼ cup
Garlic, minced3 cloves
Frozen spinach, thawed & squeezed dry10 oz
Artichoke hearts, drained & chopped14 oz can
Parmesan, grated½ cup
Mozzarella, shredded1 cup
Salt, pepper, red pepper flakesto taste

Steps

  • 01Preheat oven to 375°F. Squeeze every bit of water out of the thawed spinach using a clean kitchen towel or paper towels. Dry spinach is critical — wet spinach makes watery dip.
  • 02Mix softened cream cheese, sour cream, mayo, and garlic until smooth. Fold in spinach, artichokes, half the mozzarella, and all the Parmesan. Season with salt, pepper, and red pepper flakes.
  • 03Spread into a baking dish or cast iron skillet. Top with remaining mozzarella.
  • 04Bake 20–25 minutes until hot, bubbly, and cheese on top is melted and golden. Serve immediately with tortilla chips, pita, or crusty bread.

Squeeze the Spinach Dry
This is the most important step. Frozen spinach holds a shocking amount of water. If it goes in wet, your dip will be thin and watery. Squeeze it hard.

Soft Cream Cheese
Room temperature cream cheese mixes smoothly. Cold cream cheese leaves lumps in the dip. Set it out 30 minutes ahead or microwave 15 seconds.

Make Ahead
Mix it all together, cover, and refrigerate up to 2 days ahead. Pull it out 20 minutes before baking. Perfect for party prep without day-of stress.

Dipping Options
Tortilla chips are classic. Toasted pita wedges, sourdough slices, and crostini are all excellent. The dip is rich — something with structure works best.
