Ingredients

The Cookies
Butter, softened1 cup
Granulated sugar1.5 cups
Eggs2 large
Vanilla extract2 tsp
Almond extract (optional)½ tsp
All-purpose flour3.5 cups
Baking powder1 tsp
Salt½ tsp
Simple Royal Icing
Powdered sugar3 cups
Meringue powder3 tbsp
Water6 tbsp
Vanilla extract1 tsp

Steps

  • 01Beat butter and sugar until fluffy, 3 minutes. Add eggs and extracts, beat well. Mix flour, baking powder, and salt, then gradually add to the butter mixture. Divide dough in half, flatten into discs, wrap and refrigerate 1 hour minimum.
  • 02Preheat oven to 350°F. On a lightly floured surface, roll dough to ¼-inch thickness. Cut into shapes and place on parchment-lined baking sheets.
  • 03Bake 8–10 minutes until edges are just barely golden. The centers should look set but pale. Cool completely on the pan before decorating — at least 30 minutes.
  • 04For icing: beat all icing ingredients together until thick and glossy. Add food coloring as desired. Decorate cooled cookies. Let icing harden fully before stacking, about 2 hours.

Chill the Dough
Cold dough holds its shape in the oven. Skip the chill and your stars become blobs. One hour minimum — overnight is even better. The colder the dough, the sharper the shape.

Even Thickness
Use two wooden dowels or pencils on either side of the dough as guides to roll to an even ¼-inch thickness. Uneven cookies bake unevenly — thin edges burn, thick centers stay raw.

Almond Extract Secret
A small amount of almond extract alongside vanilla is the thing bakery sugar cookies have that home ones often don't. Just half a teaspoon — it rounds out the flavor beautifully.

Two Icing Consistencies
Make a thicker icing for outlining edges and a thinner, flood-consistency icing for filling. Outline first, let set 5 minutes, then flood the center with a toothpick to spread.
