Sweet potato casserole is the dish that starts arguments at Thanksgiving — marshmallows or pecan streusel? I respect both sides. But when that streusel comes out golden and crunchy over that creamy sweet potato filling, it's hard to argue with the results.

Ingredients

The Filling
Sweet potatoes, cooked and mashed4 cups
Butter, melted¼ cup
Brown sugar⅓ cup
Eggs, beaten2 large
Vanilla extract1 tsp
Cinnamon, nutmeg½ tsp each
Salt½ tsp
Heavy cream or milk¼ cup
Pecan Streusel Topping
Pecans, roughly chopped1 cup
Brown sugar½ cup
All-purpose flour⅓ cup
Butter, cold and cubed4 tbsp
Cinnamon½ tsp

Steps

  • 01Preheat oven to 350°F. Bake or boil sweet potatoes until completely tender. Peel and mash until smooth. Cool slightly before adding eggs.
  • 02Mix mashed sweet potatoes with butter, brown sugar, beaten eggs, vanilla, spices, salt, and cream. Beat until smooth and creamy. Spread into a greased 9x13 baking dish.
  • 03Make streusel: mix brown sugar, flour, and cinnamon. Cut in cold butter with your fingers or a fork until mixture resembles coarse crumbs. Stir in pecans.
  • 04Spread streusel evenly over the sweet potato layer. Bake 30–35 minutes until streusel is golden and crispy and filling is set. Rest 10 minutes before serving.

Bake the Sweet Potatoes
Baking sweet potatoes instead of boiling them concentrates the natural sugars and gives you more flavor. Pierce with a fork, bake at 400°F for 45–60 minutes until very soft.

Cool Before Adding Eggs
Hot sweet potato will cook the eggs before they're incorporated. Let the mashed sweet potato cool to warm before adding the eggs. Stir constantly as you add them.

Cold Butter in Streusel
Cold butter creates pockets of crunch in the streusel as it melts during baking. Room temperature butter makes the topping pasty instead of crumbly. Keep it cold.
