Ingredients

The Casserole
Egg noodles8 oz
Canned tuna, drained3 cans (5 oz each)
Frozen peas1 cup
Cheddar cheese, shredded1 cup
Homemade Cream Sauce
Butter4 tbsp
Yellow onion, diced1 small
Garlic, minced2 cloves
All-purpose flourΒΌ cup
Chicken broth1.5 cups
Whole milk1 cup
Salt, pepper, mustard powderto taste
Breadcrumb Topping
Panko breadcrumbsΒΎ cup
Butter, melted2 tbsp
Parmesan2 tbsp

Steps

  • 01Preheat oven to 375Β°F. Cook egg noodles until just al dente (they'll cook more in the oven). Drain and set aside.
  • 02Melt butter in a saucepan over medium. SautΓ© onion 4 min. Add garlic, cook 1 min. Whisk in flour, cook 2 min. Gradually whisk in broth and milk until smooth. Simmer 5 min until thick.
  • 03Season sauce with salt, pepper, and mustard powder. Remove from heat. Stir in Β½ cup cheddar until melted.
  • 04Combine sauce, noodles, tuna, and peas in a large bowl. Pour into a greased 9x13 baking dish. Top with remaining cheddar.
  • 05Mix panko with melted butter and Parmesan. Sprinkle evenly over the top. Bake 20–25 minutes until bubbly and breadcrumbs are golden brown.

Quality Tuna Matters
Solid white albacore tuna packed in water has the best texture for casseroles. Drain it very well β€” extra liquid makes the sauce watery.

Undercook the Noodles
Pull the noodles out 2 minutes before al dente. They'll finish cooking in the oven. Fully cooked noodles going in = mushy noodles coming out.

Skip the Can of Soup
The scratch cream sauce takes 10 extra minutes and tastes completely different. It's worth every second. You'll never go back to condensed soup.
