Ingredients

The Ribs
Baby back ribs (2 racks)4–5 lbs total
Dry Rub
Brown sugar3 tbsp
Smoked paprika2 tbsp
Garlic powder1 tbsp
Onion powder1 tbsp
Dried mustard1 tsp
Cayenne½ tsp
Salt and pepper2 tsp each
Finishing
Your favorite BBQ sauce1–1.5 cups
Apple juice (for steam)¼ cup

Steps

  • 01Preheat oven to 275°F. Remove the membrane from the back of each rack — grab it with a paper towel and pull it off. This is key for tenderness.
  • 02Mix dry rub and coat both sides of the ribs generously. Don't be shy. Press it in with your hands.
  • 03Place ribs bone-side down on a foil-lined baking sheet. Add a splash of apple juice to the pan. Cover tightly with foil and bake for 2.5 hours.
  • 04Remove foil. The ribs should already look incredible. Brush both sides with BBQ sauce and return to oven uncovered for 20 minutes.
  • 05Switch to BROIL on HIGH. Broil 3–5 minutes, watching closely, until sauce caramelizes and bubbles. Pull them before they burn — that char should be on the edge.
  • 06Rest 10 minutes before slicing between the bones. Serve with extra sauce on the side. Napkins required.

That thin silver skin on the back of the ribs blocks seasoning and stays tough. It takes 10 seconds. Do it.

Higher heat dries them out. Low and slow in the oven gives you the same tenderness as a long smoke. Don't rush.
