Ingredients

The Chicken
Boneless chicken breasts or thighs4 pieces
Olive oil2 tbsp
The Seasoning
Garlic powder1 tsp
Onion powder1 tsp
Smoked paprika1 tsp
Italian seasoning1 tsp
Salt1 tsp
Black pepper½ tsp
Cayenne (optional)¼ tsp

Steps

  • 01Preheat oven to 425°F. Pat chicken completely dry with paper towels — moisture is the enemy of browning.
  • 02Mix all seasoning together. Coat chicken with olive oil, then rub seasoning all over — top, bottom, sides. Don't be shy.
  • 03Place in a baking dish or sheet pan. If using breasts, pound them to even thickness first (about ¾ inch) for even cooking.
  • 04Bake at 425°F — breasts: 20–25 minutes, thighs: 25–30 minutes. Internal temp should hit 165°F. Don't guess — use a thermometer.
  • 05Rest 5 minutes before cutting. This is not optional. Cutting too soon lets all the juices run out. Rest it, then slice.
  • 06Serve with anything — rice, salad, roasted vegetables, pasta. This chicken goes with everything.

High heat = faster cooking = less time to dry out. Don't bake chicken at 350°F and wonder why it's tough. Go hot.

Thighs Stay Juicier
If you always end up with dry chicken, switch to thighs. More fat, more flavor, harder to overcook. Better in every way.

Use a Thermometer
165°F. That's done. Not 180, not 190. Pull it at 165 and rest it. A $10 instant-read thermometer is the best kitchen investment you'll make.

Season Under the Skin
If cooking bone-in chicken, push some seasoning under the skin directly onto the meat. That's where it makes the biggest difference.
