Beef stew is one of those meals that asks nothing of you but time. You put the right things in the pot, walk away, and come back to something that smells like everything good about a winter evening.

Ingredients

The Beef
Beef chuck, cut in 1.5" cubes2 lbs
All-purpose flour3 tbsp
Salt and pepperto taste
Olive oil2 tbsp
Vegetables
Yellow onion, diced1 large
Garlic cloves, minced4 cloves
Carrots, cut in chunks3 large
Potatoes, cubed1 lb
Celery, sliced3 stalks
The Broth
Beef broth3 cups
Tomato paste2 tbsp
Worcestershire sauce1 tbsp
Fresh thyme3 sprigs
Bay leaves2

Steps

  • 01Season beef cubes with salt and pepper. Toss in flour until lightly coated — this thickens the stew as it cooks.
  • 02Heat oil in a Dutch oven over medium-high. Brown beef in batches, 2–3 minutes per side. Don't crowd the pan. Remove and set aside.
  • 03In the same pot, sauté onion 4 minutes. Add garlic, cook 1 minute. Stir in tomato paste and cook another minute until it darkens slightly.
  • 04Return beef to pot. Add broth, Worcestershire, thyme, and bay leaves. Bring to a boil, then reduce heat, cover, and simmer 1 hour.
  • 05Add carrots, potatoes, and celery. Cover and continue simmering 45 minutes to 1 hour until beef is completely tender and vegetables are soft.
  • 06Remove bay leaves and thyme stems. Taste and adjust seasoning. Serve in deep bowls with crusty bread or over egg noodles.

Ingredients

The Base
Ground beef (80/20)1.5 lbs
Yellow onion, diced1 medium
Garlic, minced3 cloves
The Cans
Diced tomatoes2 cans (14 oz)
Rotel (diced tomatoes & chiles)1 can (10 oz)
Black beans, drained1 can (15 oz)
Kidney beans, drained1 can (15 oz)
Corn, drained1 can (15 oz)
Beef broth2 cups
Seasoning
Taco seasoning packet1 packet
Ranch seasoning packet1 packet
Toppings
Shredded cheddar, sour cream, avocado, tortilla chips, cilantroas desired

Steps

  • 01Brown ground beef in a large pot over medium-high heat, breaking it apart. Drain excess fat. Add onion, cook 3 minutes. Add garlic, cook 1 more minute.
  • 02Add all canned ingredients (do not drain tomatoes). Add broth, taco seasoning, and ranch seasoning. Stir everything together.
  • 03Bring to a boil, then reduce heat and simmer 15–20 minutes to let the flavors blend. Stir occasionally.
  • 04Taste and adjust. Need more heat? Add hot sauce or jalapeño. Need more depth? A squeeze of lime juice right at the end does wonders.
  • 05Ladle into bowls and pile on the toppings. This is where people get creative. Chips on the side or crushed right in — both are correct.
