The secret to bakery-style muffins with those tall beautiful domes is starting them at a high temperature. The blast of heat makes them rise fast before the crust sets. That and not overmixing. Those two things and you will never buy muffins from a store again.

Sugar¾ cup
Baking powder2 tsp
Salt½ tsp

Milk¾ cup
Vegetable oil½ cup

Preheat High
Preheat oven to 425°F. Line a 12-cup muffin tin with liners or grease well. The high heat is what creates those tall domes.

Mix Dry Ingredients
Whisk flour, sugar, baking powder, and salt together in a large bowl. Make a well in the center.

Mix Wet Ingredients
In a separate bowl whisk together eggs, milk, oil, and vanilla until combined.

Fold Together
Pour wet into dry and fold just until combined — 10 to 12 strokes maximum. Batter should be lumpy. Do not overmix.

Add Blueberries and Bake
Fold in blueberries gently. Fill muffin cups all the way to the top. Sprinkle sugar on each top. Bake 18 to 20 minutes until golden and toothpick comes out clean.

Start at 425°F
The high initial temperature is the secret to tall domed muffins. Some bakers start at 425 for the first 5 minutes then reduce to 375 to finish. Both methods work.

Toss Berries in Flour
Toss fresh blueberries in a tablespoon of flour before folding into the batter. It prevents them from sinking to the bottom during baking.

Fill Cups to the Top
For bakery-style domed tops fill your muffin cups completely full — even slightly overflowing. The batter rises up and over to create that beautiful dome.

Frozen Berries Work Too
Frozen blueberries work great — do not thaw them first. Add them straight from frozen to prevent the batter from turning purple.
