Ingredients

The Filling
Cooked chicken, shredded or cubed3 cups
Butter4 tbsp
Yellow onion, diced1 medium
Carrots, diced2 large
Celery, diced2 stalks
Garlic, minced3 cloves
All-purpose flour⅓ cup
Chicken broth2 cups
Whole milk or cream¾ cup
Frozen peas1 cup
Fresh thyme, salt, pepperto taste
The Crust
Refrigerated pie crusts (2 pack)1 box
Egg wash (1 egg + 1 tbsp water)for brushing

Steps

  • 01Preheat oven to 400°F. Press one pie crust into a 9-inch pie dish. Refrigerate while you make the filling.
  • 02Melt butter in a large skillet over medium heat. Sauté onion, carrot, and celery 5–6 minutes. Add garlic, cook 1 minute. Whisk in flour and stir 2 minutes.
  • 03Gradually whisk in broth and milk. Simmer 5–7 minutes until thick and creamy. Season with thyme, salt, and pepper generously.
  • 04Remove from heat. Stir in chicken and peas. Let cool slightly — hot filling in a cold crust makes it soggy.
  • 05Pour filling into the prepared crust. Top with the second crust, crimp the edges to seal, and cut 4–5 slits in the top to vent steam. Brush with egg wash.
  • 06Bake 35–40 minutes until the crust is deep golden brown. Rest 10 minutes before serving — the filling needs to set slightly.

Cool the Filling
Hot filling going into a raw crust starts cooking the crust before it goes in the oven. Let it cool 10–15 minutes first for a cleaner bake.

Those slits let steam escape so the crust bakes crispy instead of steaming from the inside. Don't skip them.
