Good chili is about layers of flavor built over time. You can't rush it. Let it simmer, let the spices bloom, let the flavors come together. And always — always — make it the day before if you can. Chili is one of those things that tastes twice as good on day two.

Ingredients

The Base
Ground beef (80/20)2 lbs
Yellow onion, diced1 large
Green bell pepper, diced1 pepper
Garlic cloves, minced4 cloves
The Cans
Crushed tomatoes1 can (28 oz)
Diced tomatoes with green chiles1 can (14 oz)
Kidney beans, drained1 can (15 oz)
Black beans, drained1 can (15 oz)
Beef broth1 cup
The Spices
Chili powder3 tbsp
Cumin2 tsp
Smoked paprika1 tsp
Garlic powder, onion powder1 tsp each
Cayenne pepper½ tsp
Salt and black pepperto taste

Steps

  • 01Brown ground beef in a large pot over medium-high heat. Drain excess fat. Add onion and pepper, cook 4 minutes. Add garlic and all spices, cook 2 minutes until fragrant.
  • 02Add all canned tomatoes, beans, and broth. Stir to combine. Bring to a boil, then reduce to a simmer.
  • 03Simmer uncovered 30–45 minutes, stirring occasionally, until thickened and deep in color. Taste and adjust seasoning.
  • 04Serve with shredded cheddar, sour cream, green onions, and cornbread. Better the next day — make it ahead when you can.

Bloom the Spices
Cooking the spices in the fat for 2 minutes before adding liquid activates their flavor and makes them taste deeper and richer. Don't skip that step.

Day Two is Best
Chili made the day before tastes completely different — deeper, more cohesive, more complex. If you have time, make it 24 hours ahead and just reheat.

Dark Chocolate Secret
Add one square of dark chocolate or one tablespoon of cocoa powder. It doesn't make it taste like chocolate — it adds depth and rounds out the bitterness of the spices.
