Warm milk1 cup
Active dry yeast2¼ tsp
Sugar¼ cup
Eggs2
Butter, melted⅓ cup
All-purpose flour4 cups
Salt1 tsp

Butter, softened⅓ cup
Brown sugar¾ cup
Cinnamon2 tbsp
Cream Cheese Glaze
Cream cheese, softened4 oz
Powdered sugar1½ cups
Milk3 tbsp
Vanilla extract1 tsp

Instructions

Activate the Yeast
Combine warm milk, yeast, and a pinch of sugar. Let sit 5 to 10 minutes until foamy. If it doesn't foam your yeast is not active.

Make the Dough
Mix yeast mixture with sugar, eggs, and melted butter. Add flour and salt and knead until smooth and elastic — about 8 minutes by hand or 5 with a mixer.

First Rise
Place dough in greased bowl, cover, and let rise in a warm place until doubled — about 1 hour.

Fill and Roll
Roll dough to a 16x12-inch rectangle. Spread softened butter over the surface. Sprinkle brown sugar and cinnamon evenly. Roll up tightly from the long side. Cut into 12 equal pieces.

Second Rise and Bake
Place rolls in greased 9x13 pan. Cover and rise 30 minutes. Bake at 375°F for 20 to 25 minutes until golden brown.

Glaze and Serve
Beat cream cheese, powdered sugar, milk, and vanilla until smooth. Pour generously over warm rolls. Serve immediately.

Milk Temperature Matters
Milk should be warm — around 110°F. Too cold and yeast won't activate. Too hot and you'll kill it. Warm to the touch like a comfortable bath.

Make Them Overnight
After cutting the rolls place them in the pan covered in the refrigerator overnight. In the morning let them come to room temperature 45 minutes then bake.

Use Dental Floss to Cut
Slide unflavored dental floss under the roll and cross it over the top to cut. It slices cleanly without squishing the dough the way a knife does.
Glaze While Warm
Pour the glaze over rolls straight from the oven. It melts slightly into the warm rolls and soaks into every swirl. That is what you are after.
