Fried rice is the best thing you can do with leftover rice. Day-old rice is drier and fries instead of steams — that's the secret the restaurant knows that most home cooks skip. High heat, cold rice, soy sauce. That's the whole formula.

Ingredients

The Rice
Day-old cooked white rice (cold)4 cups
Eggs3 large
Vegetable oil3 tbsp
The Mix-Ins
Frozen peas and carrots1 cup
Green onions, sliced4 stalks
Garlic, minced3 cloves
Ginger, grated1 tsp
The Sauce
Soy sauce3 tbsp
Oyster sauce1 tbsp
Sesame oil1 tsp
White pepper¼ tsp

Steps

  • 01Mix sauce ingredients together and set aside. Heat a wok or large skillet over HIGH heat until smoking. Add oil.
  • 02Add peas, carrots, garlic, and ginger. Stir fry 2 minutes. Push to the side. Scramble eggs in the empty space until just set, then break into pieces and mix into veggies.
  • 03Add cold rice. Press and spread it flat across the hot pan. Let sit 1–2 minutes undisturbed to get some crunch, then toss everything together.
  • 04Pour sauce over everything. Toss constantly 2 minutes until rice is evenly coated and sizzling. Top with green onions and sesame seeds.

Cold Rice is Non-Negotiable
Freshly cooked rice has too much moisture and will steam and clump instead of frying. Day-old cold rice from the fridge is dry and separates perfectly in the pan.

Screaming Hot Pan
Fried rice needs the highest heat your stove can produce. Medium heat gives you steamed rice. High heat gives you that slightly crispy, restaurant-style fried rice.

Eggs on the Side
Scramble the eggs in a clear spot of the pan, not all mixed in from the start. This keeps them fluffy and in visible pieces throughout the rice instead of disappearing.
