Lemon pepper chicken is one of those recipes that sounds simple but hits different when you make the pan sauce right. Butter, lemon, chicken drippings — that sauce poured over rice is everything.

Ingredients

The Chicken
Boneless chicken breasts, pounded thin4 pieces
Lemon pepper seasoning2 tsp
Garlic powder1 tsp
Salt½ tsp
Olive oil2 tbsp
The Pan Sauce
Butter3 tbsp
Garlic, minced3 cloves
Chicken broth½ cup
Lemon juice (fresh)3 tbsp
Lemon zest1 lemon
Fresh parsleyfor finishing

Steps

  • 01Season chicken with lemon pepper, garlic powder, and salt. Heat oil in a skillet over medium-high. Sear 4–5 minutes per side until golden and cooked through. Rest on a plate.
  • 02Reduce heat to medium. Add butter to the pan. When melted, add garlic and cook 1 minute.
  • 03Add broth and scrape up all the brown bits from the bottom of the pan — that's flavor. Simmer 3 minutes.
  • 04Add lemon juice and zest. Stir and simmer 2 more minutes until sauce reduces slightly.
  • 05Return chicken to the pan, spoon sauce over the top. Garnish with parsley and lemon slices. Serve over rice or with roasted vegetables.

Fresh Lemon Only
The juice from a real lemon is completely different from bottled. For a dish this simple, fresh lemon is the whole thing. Don't substitute.

Zest Too
The zest has concentrated lemon oil that adds a brightness the juice can't match alone. Use both zest and juice every time.

Don't Clean the Pan
Those brown bits stuck to the bottom after searing the chicken? That's called "fond" and it builds the entire flavor of the sauce. Scrape every bit up.

Serve Over Rice
That lemon butter sauce over white rice is arguably better than the chicken itself. Make sure there's enough rice to catch all of it.
