Lemon pound cake is sunshine in a loaf. The secret is using both lemon zest and lemon juice — the zest goes into the batter for fragrance and the juice goes into the glaze for that bright tart finish. One slice and you will understand why this has been a staple at gatherings for generations.

Butter, softened1 cup
Sugar2 cups
Eggs4
All-purpose flour3 cups
Baking powder½ tsp
Salt½ tsp
Milk1 cup
Lemon zest2 tbsp
Lemon juice2 tbsp
Vanilla extract1 tsp
Lemon Glaze
Powdered sugar1½ cups
Fresh lemon juice3 tbsp
Lemon zest1 tsp

Preheat and Prep
Preheat oven to 325°F. Grease and flour a 9x5 loaf pan or bundt pan.

Cream Butter and Sugar
Beat softened butter and sugar until very light and fluffy — at least 4 minutes. This builds the structure of the cake.

Add Eggs
Add eggs one at a time beating well after each. The batter will look silky and pale yellow.

Alternate Flour and Milk
Mix in flour mixture and milk alternately beginning and ending with flour. Add lemon zest lemon juice and vanilla.

Bake
Pour into prepared pan and bake 60 to 70 minutes until toothpick comes out clean. Do not open oven for first 45 minutes.

Glaze While Warm
Whisk together glaze ingredients until smooth. Pour over cake while still slightly warm so the glaze soaks in beautifully.

Bottled lemon juice does not compare to fresh. You need both the zest and the juice from real lemons for the full bright flavor.

Room Temperature Everything
Cold butter and eggs will not cream properly. Pull everything out an hour before baking for the best texture.
Glaze Warm Not Hot
Let the cake cool 10 minutes then glaze it. Too hot and the glaze runs off. Too cool and it sits on top instead of soaking in.

Fresh strawberries or blueberries alongside a slice of lemon pound cake is one of the best combinations in all of baking.
