Meatloaf gets a bad reputation but that's because most people have never had a good one. The glaze is what changes everything. That sweet, tangy, caramelized crust on top — once you make it right, it becomes one of the most requested meals in the house.

Ingredients

The Meatloaf
Ground beef (80/20)2 lbs
Yellow onion, finely diced1 medium
Garlic cloves, minced3 cloves
Eggs2 large
Breadcrumbs¾ cup
Whole milk¼ cup
Worcestershire sauce2 tbsp
Ketchup3 tbsp
Salt, pepper, garlic powder1 tsp each
The Glaze
Ketchup½ cup
Brown sugar2 tbsp
Apple cider vinegar1 tbsp
Worcestershire sauce1 tsp

Steps

  • 01Preheat oven to 350°F. Sauté onion in a little oil 4 minutes until soft. Cool slightly. Mix all meatloaf ingredients together — don't overmix, just until combined.
  • 02Shape into a loaf on a rimmed baking sheet or in a 9x5 loaf pan. Mix glaze ingredients and spread half over the top of the loaf.
  • 03Bake 45 minutes. Spread remaining glaze on top. Bake 15 more minutes until internal temp reaches 160°F and glaze is caramelized.
  • 04Rest 10 minutes before slicing. The loaf needs to set or it falls apart when cut. Serve with mashed potatoes and green beans — the classic trio.

Sauté the Onion First
Raw onion in meatloaf stays crunchy and has a harsh bite. Sauté it first until soft and it blends into the meat, adding sweetness and moisture without texture.

Don't Overmix
Overworking ground beef makes it dense and tough. Mix just until everything is combined — that's it. Gentle hands, tender meatloaf.

Sheet Pan vs Loaf Pan
Baking on a sheet pan instead of a loaf pan lets the sides caramelize too, not just the top. More surface area = more glaze coverage = more flavor.
