A good pound cake needs nothing on top. No frosting. No glaze. Just that dense buttery crumb and a little powdered sugar if you feel like it. This is the kind of cake that has been at every family gathering since before anyone can remember. There is a reason for that.

The Cake
Butter, softened1 cup
Cream cheese, softened8 oz
Granulated sugar3 cups
Large eggs6
Vanilla extract2 tsp
All-purpose flour3 cups
Salt½ tsp

Step by step

Preheat and Prep
Preheat oven to 325°F. Grease and flour a 10-inch tube pan or bundt pan. Set aside.

Cream Butter and Cream Cheese
Beat softened butter and cream cheese together until light and completely smooth — about 5 full minutes. This step cannot be rushed.

Add Sugar
Gradually add sugar beating well after each addition until the mixture is very light and fluffy.

Add Eggs and Vanilla
Add eggs one at a time beating well after each one. Stir in vanilla extract.

Fold in Flour
Gradually fold in flour and salt until just combined. Do not overmix at this stage.

Bake Low and Slow
Pour into prepared pan and bake 75 to 85 minutes until a toothpick comes out clean. Do not open the oven for the first 60 minutes.

Cool Completely
Cool in pan 15 minutes then invert onto a rack. Cool completely before slicing — at least one hour.

Room Temperature Everything
Butter cream cheese and eggs must all be at room temperature. Cold ingredients will not cream properly and will ruin the texture.

Cream for 5 Full Minutes
The creaming of butter and cream cheese is what gives pound cake its structure. Five minutes minimum. Use a timer.

Do Not Open the Oven
Resist every urge to open the oven for the first 60 minutes. The sudden temperature change will cause the cake to sink in the middle.

Serving Suggestions
Serve plain with powdered sugar, with fresh strawberries and whipped cream, or toasted in a pan with butter. All three are perfect.
