Pumpkin pie is the one dessert that makes people feel like they are exactly where they are supposed to be. Thanksgiving table. Christmas dinner. Any cool fall evening. The secret is not overbaking it — pull it out when the center still has a slight jiggle and it will be perfect once it sets.

Pumpkin puree15 oz can
Sweetened condensed milk14 oz can
Eggs2
Cinnamon1 tsp
Ginger½ tsp
Nutmeg¼ tsp
Cloves¼ tsp
Salt½ tsp
The Crust
9-inch pie crust1

Instructions

Step by step

Preheat the Oven
Preheat oven to 425°F. Place pie crust in a 9-inch pie dish and crimp the edges. Set aside.

Make the Filling
Whisk together pumpkin puree, condensed milk, eggs, and all spices until completely smooth. No lumps.

Fill and Bake Hot
Pour filling into unbaked crust. Bake at 425°F for 15 minutes to set the crust.

Reduce and Finish
Reduce temperature to 350°F and bake another 35 to 40 minutes until edges are set but center still has a slight jiggle.

Cool Completely
Cool on a wire rack for at least 2 hours. The filling will continue to set as it cools. Do not rush this step.

Serve with Whipped Cream
Serve at room temperature or chilled with a generous dollop of whipped cream on each slice. 😄

Pure Pumpkin Only
Use pure pumpkin puree — not pumpkin pie filling. The filling already has added sugar and spices that will throw off the whole recipe.

Jiggle is Good
The center should wobble like jello when you pull it out. It finishes setting as it cools. Overbaking causes cracking and a dry texture.

Protect the Crust Edges
Cover the pie crust edges with foil or a pie shield after the first 20 minutes to prevent them from burning before the filling is done.

Make it the Day Before
Pumpkin pie actually tastes better the next day after chilling overnight. Make it the day before your gathering for the best flavor.
