Two to Get You Started

Beef & Egg Noodle Casserole

Prep: 15 min Cook: 35 min Serves: 4–6 Cost: ~$6

Ingredients

  • 1 lb ground beef
  • 1 can cream of mushroom soup
  • 2 cups egg noodles, uncooked
  • 1 cup frozen peas
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ½ cup shredded cheese
  • ½ cup beef broth
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F. Cook egg noodles until just under done, drain and set aside.
  2. Brown ground beef with onion and garlic in a skillet. Drain fat.
  3. Mix in cream of mushroom soup and beef broth. Stir until smooth.
  4. Add noodles and frozen peas, stir to combine. Season with salt and pepper.
  5. Pour into a greased baking dish. Top with shredded cheese.
  6. Bake 25–30 minutes until bubbly and golden on top. Let sit 5 minutes before serving.

Potato & Beef Stew

Prep: 15 min Cook: 40 min Serves: 4–6 Cost: ~$5

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 2 carrots, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 32 oz beef broth
  • 1 can diced tomatoes
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Brown ground beef in a large pot over medium heat. Drain excess fat.
  2. Add onion and carrots, cook 4–5 minutes until softened. Add garlic, cook 1 minute.
  3. Stir in paprika, then add beef broth and diced tomatoes.
  4. Add diced potatoes. Bring to a boil.
  5. Reduce heat and simmer 25–30 minutes until potatoes are fork tender.
  6. Season with salt and pepper. Serve with biscuits or bread.
