The secret to zucchini bread is that the zucchini disappears completely into the batter. What it leaves behind is moisture and tenderness that you cannot get any other way. Kids who hate vegetables will eat this and ask for seconds. That is just a fact.

Ingredients

What you'll need

Wet
Zucchini, grated1½ cups
Vegetable oil½ cup
Eggs2
Sugar1 cup
Vanilla extract1 tsp
Dry
All-purpose flour1½ cups
Baking soda½ tsp
Baking powder½ tsp
Salt½ tsp
Cinnamon1 tsp

Preheat and Prep
Preheat oven to 350°F. Grease a 9x5 loaf pan and set aside.

Prepare the Zucchini
Grate the zucchini on the large holes of a box grater. Do not peel it first. Do not squeeze out the moisture — you need it.

Mix Wet Ingredients
In a large bowl whisk together oil, eggs, sugar, and vanilla until smooth. Stir in the grated zucchini.

Add Dry Ingredients
Add flour, baking soda, baking powder, salt, and cinnamon to the wet mixture. Fold gently until just combined.

Bake
Pour batter into prepared loaf pan. Bake 55 to 65 minutes until toothpick comes out clean.

Cool Completely
Cool in pan 10 minutes then transfer to a rack. This bread slices much better once completely cool.

Don't Squeeze the Zucchini
Unlike some recipes this one needs the moisture from the zucchini. Don't squeeze it out or your bread will be dry.

Add Chocolate Chips
Fold in a cup of chocolate chips for an absolutely irresistible version. The chocolate and zucchini combination sounds weird but tastes incredible.

Add Walnuts
A half cup of chopped walnuts folded into the batter adds great texture and a nutty depth of flavor.

Grate Fine or Coarse
Fine grating makes the zucchini completely disappear into the bread. Coarse grating gives you little green specks. Both are delicious.
